Kai Shun Paring Knife. The art of Japanese knife manufacturing with laminated Pakka wood handle.
The blade is made from 32 layers of steel giving these knives their distinctive contoured texture. I bought the smallest - these knives are frighteningly expensive!
This steel making process was thought to originate in Damascus, hence the name but countries such as India, Sri Lanka & China may have developed this method before Syria.
The idea behind this steel is have a very hard cutting edge with layers of lower carbon steel to give strength.
Many people state that carbon steel is the best material for knives due to being easier to sharpen than stainless with its high chromium content. Good quality stainless knives are expensive due to the added elements that allow easier sharpening. Carbon steel knives can rust or taint food & need to be carefully cleaned then oiled.
Sabatier still do a range of carbon steel knives but Global, Henckels, Wusthof, Victorinox, I O SHEN, Robert Welch etc use varying types of stainless.
Some makes such as Global, Henckels & Tojiro also have stainless steel handles & look like they are seemless but the materials are usually different. I have a Henckels Twin Fin knife that has a magnetic blade only. I maintain that the handle shape is almost as important as the blade.
Although this knife is photographed on a polished slate place-mat, wooden or plastic chopping boards or mats should only be used with even cheap knives. I store my kitchen knives on a magnetic rack, they get washed by hand after use & sharpened with a wetstone.
Some knives are not made of steel but are ceramic such as Kyocera's that use Zirconia. This material makes for a sharper edge that stays keen longer but need professional resharpening. They must be very carefully handled, otherwise the blade will chip & must never be dropped on a hard surface - they can shatter.

For part of the Founder's Day celebration, World Learning colleagues and I went to the local senior center and spent the afternoon polishing stainless steel kitchen appliances/countertops, and cleaning dishes. The place looked a LOT better after we were done, and we had a bit of fun doing it too. It never hurts to have awful 80s music to jam to (ala Safety Dance) when you're in an apron, scrubbing with a brillo.
